ingredients:
1 cup flat-leaf parsley leaves, firmly packed
½ cup fresh coriander leaves
4 cloves garlic, peeled
2–3 tbsp red wine vinegar to taste
½ cup extra virgin olive oil
Small red chilli, deseeded and chopped or ½ tsp dried chilli flakes
1 tsp dried oregano
1 tsp smoked paprika
Salt and freshly cracked pepper, to taste
Preparation:
Chop herbs: add parsley and coriander to food processor and pulse a few times until finely chopped but not puréed
Add garlic, chilli, vinegar, oregano, paprika, salt, and pepper. Pulse until combined
Add oil: Pour in olive oil and mix well until the sauce is glossy and the herbs are evenly coated
Taste & adjust: Add more vinegar or salt as needed - chimichurri should be bright, tangy and slightly spicy
