ingredients:

  • 1 cup flat-leaf parsley leaves, firmly packed

  • ½ cup fresh coriander leaves

  • 4 cloves garlic, peeled

  • 2–3 tbsp red wine vinegar to taste

  • ½ cup extra virgin olive oil

  • Small red chilli, deseeded and chopped or ½ tsp dried chilli flakes

  • 1 tsp dried oregano

  • 1 tsp smoked paprika

  • Salt and freshly cracked pepper, to taste


Preparation:

  1. Chop herbs: add parsley and coriander to food processor and pulse a few times until finely chopped but not puréed

  2. Add garlic, chilli, vinegar, oregano, paprika, salt, and pepper. Pulse until combined

  3. Add oil: Pour in olive oil and mix well until the sauce is glossy and the herbs are evenly coated

  4. Taste & adjust: Add more vinegar or salt as needed - chimichurri should be bright, tangy and slightly spicy
