ingredients:

  • ⅓ cup sun-dried tomatoes

  • ½ bunch basil

  • ½ bunch flat leaf parsley

  • 1 tbsp capers

  • 1 tsp paprika

  • Zest from 1 lemon

  • 1 cup extra virgin olive oil

  • 3 mozzarella balls

  • OPTIONAL: 70g pine nuts


Preparation:

  1. Prepare the sun-dried tomatoes by slicing them into small cubes or longer ribbons, dealers choice

  2. Chop the basil and parsley and add these to the sun-dried tomatoes in a bowl. Add the capers, paprika, lemon zest and olive oil, stir all the ingredients together

  3. Remove the mozzarella from it’s liquid and slice large circles about ½ cm thick, lay these slices on to the serving dish, when all the mozzarella balls are sliced and on the serving dish, pour the oil mixture over the mozzarella

  4. Serve with salad, fresh bread and enjoy
