Mixed Green & Three Cheese Pie

ingredients:

  • 375g ricotta

  • 1 bunch silverbeet

  • 60g baby spinach

  • 1 leek, washed

  • 3 garlic cloves

  • 100g marinated goats cheese

  • 3 eggs

  • 100g grated Parmesan

  • 150g filo pastry

  • 140g butter, melted

  • Salt and pepper

  • OPTIONAL: black sesame seeds


Preparation:

  1. Preheat your oven to 180°C

  2. Prepare the silverbeet by removing the stalks from the leaves and chopping the leaves. Disgaurd the stalks

  3. In a large saucepan cook the minced garlic, sliced leek and butter or olive oil (1tbsp) until soft, with pepper and salt. Add the silverbeet and spinach until reduced in size and soft. Put mixture in a colander to drain off any excess liquid, set aside to cool

  4. In a large mixing bowl add, eggs, grated Parmesan, goats cheese, tsp salt, ricotta and the cooled spinach mixture. Mix together well

  5. Using a large cake tin, over line with baking paper and brush some melted butter on the baking paper

  6. Lay out the filo pastry, using a pastry brush, start painting each sheet with butter and overlaying the filo into the cake tin. When you have used all the filo add the spinach mixture

  7. Scrunch and fold over the edges of the filo to create a border around the edge, this will be lovely and crispy when cooked

  8. Paint on the remaining butter to the filo and sprinkle sesame seeds if using, add salt and pepper

  9. Put in the oven for an 75 minutes, or until golden brown and firm in the centre
