ingredients:

  • 1 bunch curly leaf parsley

  • ½ bunch flat leaf parsley

  • ½ bunch basil

  • 75g cranberries

  • 80g pine nuts, toasted

Dressing

  • 3 tbsp extra virgin olive oil

  • ½ tsp Dijon mustard

  • Juice from half a lemon

  • Pinch of salt


Preparation:

  1. Remove herb leaves from the stems, chop ¾ of the leaves and add to a salad bowl

  2. Add the whole leaves along with the cranberries and toasted pine nuts

  3. Put all the dressing ingredients in a jar and shake until combined, dress the salad right before serving
