ingredients:
1 bunch curly leaf parsley
½ bunch flat leaf parsley
½ bunch basil
75g cranberries
80g pine nuts, toasted
Dressing
3 tbsp extra virgin olive oil
½ tsp Dijon mustard
Juice from half a lemon
Pinch of salt
Preparation:
Remove herb leaves from the stems, chop ¾ of the leaves and add to a salad bowl
Add the whole leaves along with the cranberries and toasted pine nuts
Put all the dressing ingredients in a jar and shake until combined, dress the salad right before serving
