ingredients:

  • 1 small baguette, sliced into 1cm rounds

  • Olive oil, for brushing

  • 200g brie, cut into bite-sized pieces

  • 400g red grapes

  • 1 tbsp balsamic vinegar

  • 1 tsp honey

  • Fresh thyme leaves


Preparation:

  1. Preheat oven to 200°C. Place grapes on a lined tray, drizzle with balsamic and honey, roast 15–20 minutes until soft and caramelised

  2. Brush baguette slices with olive oil, toast until golden

  3. Place brie on toast, top with warm grapes, drizzle with pan juices, and sprinkle with thyme
