ingredients:

  • 1 cup pearl couscous

  • 1 small bunch fresh dill, chopped

  • 1 small bunch fresh parsley, chopped

  • 2–3 tbsp extra virgin olive oil

  • Juice of 1 lemon (plus zest, if desired)

  • Flakey sea salt & cracked pepper

  • ½ cup pomegranate seeds

  • ½ cup crumbled feta cheese


Preparation:

  1. Bring a pot of salted water to a boil. Add the couscous and cook according to package instructions (usually 8–10 minutes) until tender but with some bite. Drain and rinse under cool water, then let cool slightly

  2. In a large mixing bowl, toss the couscous with olive oil, lemon juice, salt, and pepper

  3. Fold in the chopped dill, parsley, pomegranate seeds, and crumbled feta. Taste and adjust seasoning if needed. Serve warm or at room temperature
