ingredients:

  • 4 large Lebanese cucumbers

  • Extra virgin olive oil

  • Fresh mint, parsley and dill

  • ⅓ cup toasted almond slivers

Dressing:

  • 2 tbsp extra virgin olive oil

  • 1 tbsp white balsamic vinegar

  • 1 garlic clove, minced

  • 1 tbsp pomegranate molasses

  • Salt & pepper

  • Sumac


Preparation:

  1. Halve cucumbers lengthwise, cut into 4–5 cm chunks, and gently smash with the flat side of a knife or rolling pin. Sprinkle with salt and let drain in a colander for 10 minutes. Pat dry

  2. In a jar make the dressing; add the olive oil, vinegar, garlic, pomegranate molasses, salt, pepper, and a sprinkle of sumac. Shake until combined

  3. Toss the smashed cucumbers with the dressing, then arrange on a plate. Scatter fresh herbs and toasted almond slivers. Optionally, add a drizzle of extra olive oil or a splash of lemon zest
