ingredients:

  • 1.2 kilos beef chuck

  • 3 anchovies

  • 1 litre chicken bone broth

  • 1 onion

  • 1 carrot

  • 1 celery stalk

  • 2 garlic cloves

  • ½ bunch oregano

  • ½ bunch thyme

  • 1 tbsp olive oil

  • Salt & pepper

  • ½ cup cream


Preparation:

  1. Turn your oven to 160°C

  2. In a food processor or similar add the onion, carrot, garlic and celery (do in batches if need be), blitz until finely chopped. Add to a dutch oven with the olive oil

  3. On the cooktop put the dutch oven on a medium heat and sauté the onion, carrot, garlic and celery until softened. Move to one side of the pan

  4. Add some oil from the anchovies and start browning the beef

  5. Once all the beef is browned add the chicken bone broth, anchovies and herbs, bring to the boil

  6. Remove from the heat and add a cover of grease proof paper

  7. Put the lid on and this goes in the oven for 5 hours

  8. When cooled, remove the herb stalks, mix in the cream. Serve with salsa verde
