ingredients:

  • 1 fennel

  • 1 orange

  • 2 cos lettuce mini (or 1 large)

  • 1 tbsp olive oil

  • Juice from ½ lemon

  • ½ tsp salt


Preparation:

  1. Finely slice the fennel from the bottom to the top, set aside

  2. Peel the orange, then slice into thin circles, set aside

  3. Chop the cos and add as the base layer of the salad, place cos on your serving platter

  4. Layer the fennel and orange slices on top

  5. Add olive oil, lemon and salt to a jar or jug, mix well and dress when you’re ready to serve
