ingredients:
200g kale, stems removed, leaves finely shredded
250g Brussels sprouts, finely shredded
½ cup+ parmesan, finely grated
Lemon Dressing;
¼ cup olive oil
2 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp honey
Salt and pepper, to taste
Preparation:
Whisk dressing ingredients in a bowl until emulsified
Place kale and sprouts in a large bowl. Pour over dressing and massage gently into leaves for 1–2 minutes
Toss through parmesan. Serve immediately or chill for up to 1 hour
