ingredients:

  • 200g kale, stems removed, leaves finely shredded

  • 250g Brussels sprouts, finely shredded

  • ½ cup+ parmesan, finely grated

  • Lemon Dressing;

  • ¼ cup olive oil

  • 2 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp honey

  • Salt and pepper, to taste


Preparation:

  1. Whisk dressing ingredients in a bowl until emulsified

  2. Place kale and sprouts in a large bowl. Pour over dressing and massage gently into leaves for 1–2 minutes

  3. Toss through parmesan. Serve immediately or chill for up to 1 hour
